The Mañoco
is the Yucca dehydrated and milled, a step before make the
casaba.
Its prepared in
"sebucanes".
The "sebucanes" are a
kind of juice squeezers made of vegetable fiber, with an
extension of 2 or 3 meters. They are handcrafted looking
like a rice grain, with a handle of basket in both
sides. In the widest side of the "sebucan" the "brave
yucca" is placed just after been grated, and then
squeezed several times to finally make Mañoco.
It's important to
underline that the Mañoco (a kind of casaba) is prepared
with bitter yucca or brave yucca, also called "manioc"
in English, and in Portuguese "mandioca". In this
preparations some autochthonous tools are used, like the
grater and the "budare".
Its an excellent source of dietary fiber for your
soups, and is also used to prepare creams and fruit
drinks.
